Feeling hungry but have absolutely no time to spare to whip up a sumptuous meal?

Yeah, we know what you’re going to say. “I’ll just grab some instant noodles to fill my stomach.” But, aren’t you sick of eating instant noodles (unhealthy, by the way) all the time?

This post will help offer you some fast, simple & nutritious dishes that you can enjoy at home or at school.

EGG FRIED RICE

Egg Fried Rice

Rice. Everyone’s staple food.

Here at LemonSqueeziy, we present you a quick and easy rice dish – Egg Fried Rice.

All you need are about a handful of rice, eggs, garlic and onions. Before you know it, the fried rice is ready!

Ingredients: (Serves 2)

  • 100 g cooked white rice (or more if you are feeling hungry)
  • 1 egg, beaten and seasoned with 1 tsp of light soya sauce
  • 2 tbsp cooking oil
  • 5 cloves of garlic (chopped)
  • 3 onions and spring onions (chopped)

Directions:

  1. Heat oil and stir fry garlic & onions till fragrant (and brown)
  2. Add cooked rice.
  3. Pour egg mixture evenly over rice and use high heat (prevents sogginess) to fry rice until it is dry.
  4. Garnish with chopped spring onions

Prep time: 10 minutes

Tip: For you Squeeziys who want more flavour in their rice, Luncheon meat is recommended.

FISH CAKE OMELETTE

We’re sure you are all familiar with good old plain Omelettes. However, have you ever tried Fish Cake Omelette? It looks similar to a dish called Carrot Cake in Singapore.

Fish cake is actually delicious in many famous Singapore foods like Char Kway TeowLaksa & Hor Fun too. It can even be eaten on its own.

It sure is a versatile dish, right?

Ingredients:

  • 1 large piece fishcake (diced)
  • 3 eggs (beaten)
  • 1 tsp light soy sauce
  • 2 tbsp cooking oil

Directions:

  1. Mix beaten eggs, diced fishcake & soy sauce in a bowl.
  2. In a heated pan, add oil. Pour the fishcake/egg mixture onto the pan.
  3. Fry until one side of the omelette is golden brown. Flip over, fry the other side until it is golden brown too.
  4. Serve with rice, porridge or sandwich in bread. Enjoy!

Prep time: 10 minutes

GRILLED CHEESE SANDWICH

Sandwiches can double up as a dish for both lunch and breakfast. Most importantly, it is extremely easy and quick to make.

Ingredients:

  • 2 slices white bread
  • 2 slices of Cheese
  • Margarine or butter

Directions:

  1. Place a slice of cheese on top of 1 bread slice. Cover with remaining bread slice.
  2. Spread the outsides of the bread with butter.
  3. Cook in frying pan on medium heat 3 minutes on each side or until golden brown on both sides. Alternatively, you can pop the bread into the toaster just like the way you usually make toast.

Prep time: 10 minutes

Tip: For extra tastiness, add bacon on top of the cheese. You can also eat this sandwich with carrot sticks, an apple and a cup of milk for extra nutrition.

CHOCOLATE SMOOTHIE

Chocolate Smoothie

You suddenly feel thirsty, but don’t want to drink plain water. We know you are craving for something sweet. This is the perfect drink to satiate that sweet tooth of yours.

Ingredients:

  • 2 Choco bars
  • 2 scoops Choco ice-cream,
  • 500 ml milk
  • 2 tsp sugar
  • Handful of ice cubes
  • Add Choco syrup or powder & whipped cream for toppings

Directions:

  1. Blend all the ingredients together until smooth and enjoy!

Prep time: 5-10 minutes
